Candied leatherwood honey, 2 kg tin, R Stephens, Tasmanian Organic

Tasmania's (and Australia's) largest producer of leatherwood honey - R Stephens - is one of the few beekeepers who produce leatherwood honey in a candied style.

Even though the honey is firm, rather than liquid, it is still absolutely 100% pure and natural honey. It contains no chemicals, no artificial colouring, or indeed any additives at all. 

However the honey has been allowed to crystallize, or candy, in a carefully managed process.

(Essentially the process has the honey seeded with a small amount of already crystallized honey, and then lightly stirred once it has started to crystallize. )

The result is a thick, rich and firm texture, similar to creamed honey.

Many honey lovers prefer their honey candied.

The prefer it because they reckon its easier to use, easier to handle and easier to store. There's certainly less chance of a mess, or spillage.  And when compared to liquid honey it is easier to spread with a knife.

Of course this is a genuine leatherwood honey so it has all the unique and delicious flavour of Tasmanian leatherwood honey. It has an intense, appealing taste and a lovely, sweet perfume.
