So this is a medium-sweet honey with a pleasing but not overwhelming flavour.
Its called Mountain gum honey because its been harvested from Mountain gum trees growing at The Bluff in Victoria's Alpine National Park.
The Mountain gum is an Australian native eucalyptus or gum tree (Latin name - Eucalyptus Dalrympleann) that grows at high altitude in the mountaineous regions of northern Victoria and southern New South Wales.
Note: Naturally, because it still contains pollen and other goodies that are normally filtered out in supermarket honey, raw honey may crystallize quite quickly.
(You can always soften it, or course, or even return it to a liquid state if you want. All you need to do is warm it up a little. For example, by standing the jar in hot water (but not boiling!!))
But whether you prefer this honey soft, solid or liquid, it'll never lose its goodness and flavour..
The honey is certified organic by Aus-Qual in accordance with the National Standard for Organic and Bio-Dynamic Produce.
